A Sweet Treat For When You Cheat

One of the girls that completed my 15 Day Detox at the start of the year (who by the way now is rocking a full on six pack at age 40+ from that nutrition plan and her hard training at our personal training facility), has been bringing in these awesome treats for everyone to try.  The best ones have been these little Mini Minty Chocolate Muffins so I asked her to give us all the recipe for them.


Now before I give you her recipe; if you are wondering, a) unlike most products trying to be healthy and taste nice at the same time, these taste great and b) I am definitely not a food nazi.  To further this, human nature means we are not going to stick to healthy eating 100% of the time and it is actually in your best interest to regularly plan breaks from regimented dieting.  And if you are going to cheat (which you will at some stage), we should be smart, plan for it and make sure what we eat in that time is as healthy as possible.  And that is why I like these little muffins so much (besides the taste of course!).  So here it is:

Mini Minty Chocolate Muffin

Ingredients

2 tbsp flaxseed ground

3 tbsp almond meal

1 tbsp cocoa

¼ cup xylitol

½ tsp baking powder

40g 85% cacao dark chocolate (melted)

1 egg

2 tbsp strong brewed coffee

1tbsp olive oil

½ tsp vanilla extract

30g sugar free dark mint chocolate (chopped)

Directions

1) Preheat oven to 180 degrees.

2) Line small muffin tins with paper.

3) Mix all dry ingredients.  Add melted chocolate, egg, coffee, olive oil, vanilla and chopped mint chocolate, mix well.

4) Pour into lined tin and bake for 8 – 10 minutes.
